Notes

Red Velvet Ice Cream Sandwiches are a layered frozen dessert made by baking a thin sheet of red velvet cake and filling it with vanilla ice cream. The cake batter comes together quickly using a boxed mix with added butter, eggs, vanilla, and salt, then bakes into a soft, uniform slab. Once cooled, the cake is split into two large pieces and used to sandwich a thick layer of ice cream before slicing into portions.

This recipe works because baking the cake as a single sheet keeps the layers even and easy to assemble. Letting the cake cool completely before adding the ice cream prevents melting and helps the sandwich hold its shape. Using softened ice cream makes it easier to spread evenly, while chilling the assembled sandwich firms everything up for clean slicing. The mild cocoa flavor of red velvet pairs well with plain vanilla ice cream without overpowering it.

This dessert fits well into home baking for gatherings or make-ahead treats. It can be assembled in advance and kept frozen until serving. For best results, let the sandwiches sit briefly at room temperature before cutting or serving. The structure stays the same even if a different ice cream flavor is used.
