Copycat Nutter Butters

These Copycat Nutter Butters are one of the easiest yet most flavorful cookies to make at home. They’re defined by cookies made with all-purpose, brown sugar, vanilla, butter and egg, and creamy filling of peanut butter, butter, powder sugar, vanilla extract, and kosher salt. They’re tasty breakfast and snack. My kids even love bringing to game day celebrations at school.

  • Preheat oven to 350° F and prepare a large baking sheet lined with parchment paper.

  • To make filling: In a large bowl, cream together peanut butter and butter until light and fluffy.

  • Spread frosting evenly on one cookie and sandwich another on top. Repeat until all cookies are filled. Serve.
