Notes
Chocolate Pickles are a simple no-bake snack that pairs sweetened pickle chips with a chocolate coating. Pickle slices are first tossed with sugar, chilled briefly, and then dried before being dipped halfway into melted chocolate mixed with coconut oil. A light sprinkle of flaky salt finishes them before a short rest in the refrigerator to set.
This recipe works because the pickles provide a crisp, tangy base that contrasts with the sweetness of the sugar and chocolate. Chilling the pickles after sugaring helps the coating adhere, while patting them dry prevents excess moisture from interfering with the chocolate. Adding coconut oil to the melted chocolate creates a smoother coating that firms up cleanly once chilled without becoming too brittle.
This is an easy recipe to prepare ahead since it requires no baking and minimal equipment. The pickles are best stored chilled so the chocolate stays firm. They work well as a conversation-style snack for small gatherings. Keeping the pickle chips fairly thick helps maintain crunch, and the balance of sweet, salty, and tangy flavors stays consistent even with small adjustments to the chocolate or salt.
