Copycat Nutter Butters
These Copycat Nutter Butters are one of the easiest yet most flavorful cookies to make at home. They’re defined by cookies made with all-purpose, brown sugar, vanilla, butter and egg, and creamy filling of peanut butter, butter, powder sugar, vanilla extract, and kosher salt. They’re tasty breakfast and snack. My kids even love bringing to game day celebrations at school.

Ingredients
- FOR COOKIES
1 1/2 c. all-purpose flour
1/2 c. Butter, softened to room temperature
1 large egg
1 tsp. pure vanilla extract
1 c. smooth peanut butter
1 tsp. baking soda
1/2 tsp. kosher salt
1/2 c. sugar
1/2 c. packed brown sugar
- FOR FILLING
5 tbsp. unsalted butter, softened to room temperature
1 c. creamy peanut butter
1 1/2 c. powdered sugar
1 tsp. pure vanilla extract
pinch of kosher salt
Directions
- Preheat oven to 350° F and prepare a large baking sheet lined with parchment paper.
- Add flour, baking soda and salt to a medium bowl, stir to combine.
- Combine butter and sugars in a large bowl, and whisk until light and fluffy. Add egg, vanilla and peanut butter and beat until combined.
- Add the ingredients to wet and mix until just combined.
- Roll dough into oblong balls. Make a criss-cross pattern by pressing into dough with tines of a fork, and then pinch slightly in the center to create an indent.
- Place cookies onto baking sheet and bake for 20 minutes, or until edges are slightly golden. Let cool 10 minutes before removing from pan.
- To make filling: In a large bowl, cream together peanut butter and butter until light and fluffy.
- Add powdered sugar, vanilla and salt and beat until evenly combined.
- Spread frosting evenly on one cookie and sandwich another on top. Repeat until all cookies are filled. Serve.
