Notes
Grilled Chili Cheese Dogs are a skillet-made sandwich that combines classic chili dogs with a grilled, cheesy bun. Flattened hot dog buns are buttered and seasoned, then filled with split hot dogs simmered in chili, shredded cheddar, onion, and chives. Cooking everything in a skillet allows the buns to toast while the cheese melts, creating a compact sandwich that’s easy to eat.
The recipe works because flattening the buns increases surface contact with the pan, helping them brown evenly and hold the fillings in place. Splitting the hot dogs allows the chili and cheese to settle into the center rather than sliding off. Covering the skillet briefly traps heat, which melts the cheese thoroughly without overcooking the bread or drying out the filling.
This dish fits well into everyday cooking since it uses familiar ingredients and comes together quickly in one pan. It’s best served right away while the cheese is melted and the buns are crisp. Leftover chili can be reheated and reused, but the sandwiches themselves don’t store well once assembled. Small adjustments, such as changing the cheese or skipping the onion, can be made without changing the overall method.
