Caprese Stuffed Avocados

Stuffed avocado can get me hooked at any time. It’s a super healthy and tasty food for breakfast. These Caprese Stuffed Avocados are then introduced here. Avocados are cut in half, removed cores, scoop out (3/4 of the way through), then stuffed with a delicious mix of diced avocado with tomatoes, mozzarella, Italian seasoning, balsamic, and olive oil. My family go crazy for it from the moment we taste it. Yummy!

Ingredients

  • 2 avocados, pitted

  • 1/2 c. cherry tomatoes, halved

  • 1/2 c. chopped fresh mozzarella

  • Italian seasoning

  • balsamic vinegar

  • extra-virgin olive oil

  • kosher salt

  • Freshly ground black pepper

  • Basil, for garnish

Directions

  • Scoop out avocados, about 3/4 of the way through. Dice avocado and set aside.
  • Add diced avocado with tomatoes, mozzarella, Italian seasoning, balsamic, and olive oil in a large bowl, toss to combine.
  • Season with salt and pepper.
  • Divide salad among 4 avocado halves and garnish with basil. Serve immediately.
