Avocados are cut in half, removed cores, scoop out (3/4 of the way through), then stuffed with a delicious mix of diced avocado with tomatoes, mozzarella, Italian seasoning, balsamic, and olive oil. My family go crazy for it from the moment we taste it. Yummy!

Notes
Caprese Stuffed Avocados are a no-cook dish that combines ripe avocados with a simple tomato and mozzarella filling. The avocados are halved and partially scooped to create space, then the removed flesh is diced and mixed with cherry tomatoes, fresh mozzarella, Italian seasoning, balsamic vinegar, and olive oil. The mixture is spooned back into the avocado halves and finished with fresh basil.
This recipe works well because the creamy texture of the avocado balances the firmness of the tomatoes and mozzarella. Mixing some of the avocado into the filling helps tie everything together and keeps the stuffing from feeling loose. The combination of balsamic vinegar and olive oil adds acidity and richness without overpowering the mild ingredients, while seasoning at the end keeps the flavors clean and balanced.
This dish fits easily into everyday home cooking since it requires minimal prep and no heat. It’s best served right after assembling to prevent browning. Ingredients can be prepped slightly ahead, but the avocados should be filled just before serving. The basic structure stays the same even if proportions are adjusted or additional herbs are added.
